First, you don’t have to worry about forgetting an important step or part of a process. Second, such documentation paves the way for handing these things off when the time comes. If you want to outsource you order-taking for example, it’s much easier to do if you already have it documented. Even if the documentation isn’t pretty, it’s fairly easy to make it readable for others.
