Very Unique Ice Cream

Entrepreneur.com has up an interesting profile of an ice cream entrepreneur who loves to experiment with unique flavors:
While most ice cream entrepreneurs concern themselves with perfecting basic vanilla and chocolate, Jeni Britton Bauer started her career experimenting with flavors like bacon, salmon and curry. Her first concoction was a combination of chocolate ice cream and cayenne pepper essential oil.
“I just thought it was a super-creative thing to do: make something frozen hot,” Bauer says. “So when I did that, I started thinking, ‘Oh, my gosh, I’ve never had ice cream with rose petal or basil or all these other wonderful things.’”
Jeni’s business is Jeni’s Splendid Ice Creams.
According to her website, Jeni Britton Bauer became inspired to make artisan ice creams while working at a French patisserie. Drawing on the practices of a traditional pastry kitchen, Jeni created her own techniques to make American ice creams that are less sweet and more flavorful.
Some of their unique flavors include:
- Salty Caramel Initial notes of burnt sugar give way to mouth-watering saltiness. A perfect salty sweet balance.
- Queen City Cayenne Rich chocolate reveals back-of-the-throat spice. Finish is tingly and complex.
- Bangkok Peanut Complex blend of hot, salty, savory and sweet melt for a satisfying treat. Peanut butter and toasted coconut give way to lingering spicy finish.
- Bourbon Buttered Pecan Subtle corn mash notes come first, followed by rich and savory pecans; a charming hit of Bourbon finishes.
- Wildberry Lavender Complex. Intense lavender with hints of exotic spices and lots of brambly berry flavors.
- Black Coffee True strong coffee flavor with absolutely no bitterness; captures and translates the aroma of coffee perfectly.

Of the flavors listed, I think salty caramel sounds the best. I don’t think I would go out of my way to buy most of those flavors though, not without trying them. I wonder if she does anything like free or discounted samples so skeptics can test it for themselves. With so many odd flavors, that would probably help her draw in some new customers.

A flavor combo I adored but have only seen done years ago, at Christmas – cinnamon apple pie. It was a Baskin Robbins seasonal. They did it once, then evidently…never repeated it. And, of course WE LOVED IT but alas, we’ll never find Cinnamon Apple Pie ice cream anywhere because (just like Postum) it no longer exists. Drat the luck!!
