Sector Summary: The bakery sector includes food establishments that sell sandwiches, salads, a selection of soups, bagels, breakfast items, breads, pastries and desserts. Generally, these are large operations with significant real estate needs. In urban markets, these centers receive a significant portion of their sales during lunchtime hours. While this percentage is lower in suburban settings, lunchtime business still makes up the majority of sales. When analyzing bakery businesses, we look at concepts that are able to generate healthy year over year revenues and keep food costs low.
