Niche Biz: Blueberry-Based Baked Goods

Among the members of Chinchilla United Methodist Church, Jackie Walsh is renowned for her expertise with blueberry-based baked goods.

Every year at the church’s summer craft fair, she’s in charge of the “blueberry tent,” featuring a trove of delectable treats, from muffins and breads to pies and cakes.

This year, she’s adding a new dessert to the ranks – her Blueberry Danish, the winning recipe in this week’s Local Flavor: Recipes We Love contest. For her efforts, Ms. Walsh received a $100 gift certificate from Rossi’s ShurSave Market in Old Forge.

The Chinchilla resident first made the Danish a few months back for an after-services fellowship at her church.

“It went over huge,” she said. “A couple of the older church members are bakers. So, when you get compliments from them, it makes you feel good about what you’re doing.”

She used her cherry Danish recipe as the template for the blueberry version.
