Potatopia Puts the ‘Oh’ in Potato

In 2011, entrepreneur Allen Dikker saw an opening in the crowded fast-casual restaurant space. The simple, yet delicious potato — the starchy spud that makes a perfect blank canvas for savory sauces and toppings. An idea was born.

He envisioned a place where customers could build their own potatoes with high-quality, fresh ingredients. Toppings that include veggies, cheeses, a wide range of sauces and proteins like chicken, bacon and shrimp.

Dikker did the necessary testing and research and decided to make his idea a reality. He opened his first Potatopia, a 375-square-foot location at a mall in Edison, N.J., in December 2011. It quickly gained steam, and the next Potatopia location was opened in August 2013, a standalone restaurant in New York’s Greenwich Village.

The first franchisee-owned Potatopia locations were opened early this year at malls in Jersey City and Garden City, N.Y. By the end of the year, he hopes to have a total of 10 locations. His long-term vision is for 100 locations — and he’s looking for franchisees.

Potatopia has created two core store models to choose from. They are seeking highly motivated and detail-oriented individuals to launch and operate these flexible models. The initial investment necessary to begin the operations of a Potatopia restaurant ranges from $182,725 to $297,050 for a kiosk location and $265,775 to $475,150 for a traditional location.
