Jack’s Acapulco Chicken Salad, which debuted for a limited time in 2006, features a mix of fresh lettuces topped with shredded pepper jack cheese, grape tomatoes, cucumber slices, red onion and lime wedges served with blue corn tortilla strips and cilantro lime dressing on the side. Guests can customize their salad with a choice of chicken – grilled chicken strips, crispy chicken strips or Spicy Chicken Bites.

“The refreshing combination of lime and cilantro made the Acapulco Chicken Salad very popular with our guests,” said Teka O’Rourke, director of menu marketing and promotions for Jack in the Box Inc. “We’ve received a lot of requests to bring it back and we’re excited to offer it again during the warm spring and summer months.’
