Breakfast Restaurant Aims To Go Over Easy

The restaurant has moved and the marquee has a new look, but Jimmy’s Egg is still serving up the same omelettes and other breakfast staples.

Jimmy’s Egg reopened last month near 41st Street and Peoria Avenue after leaving its decade-long home near 51st Street and Yale Avenue in August.

In addition, the franchisee now has plans to expand the Oklahoma City-based chain into at least eight more locations in northeastern Oklahoma — part of an aggressive agenda for going nationwide.

Even with other restaurants folding left and right, Jimmy’s Egg owners think they can power through the recession.

“With the economy the way it is, people will be looking for value, and that’s our strength,” said Ken Burke, franchisee and operator of the newly opened restaurant.

Most entree items on the menu cost between $5 and $7, Burke said. Full post.
