Peter Mark said: “This is my first Subway store. I had no idea that it was the 100th Subway store to open in the Republic of Ireland until I received word this week. I’ve been working on getting the store open for months and this was a great surprise.

“I’ve always wanted to be my own boss and to create jobs for local people. I looked at a few options and owning a Subway store was the one which stood out. Opening a business during a recession is not something I am worried about. My next big challenge is to get Brian Cowen to officially open the store.”

Subway is the largest quick-service food chain in Ireland and the company is continuing to grow as it aims to open 119 new stores across Ireland by 2010. Paul Heyes, Development Agent for the Republic of Ireland, said: “The recession is certainly helping the growth of our business but we have found that the biggest driver of our success is our Sub of the Day menu which offers customers a different Sub each day for just €2.99.
