Shop Brings Authentic Bagels, Family Atmosphere

Bruegger’s Bakery-Cafe franchisee Mike Salcone sits in a booth at his newest location at the Shops on Lane Avenue.

Over his shoulder is a line of customers, including high-schoolers, moms and dads with small children, and the occasional Ohio State graduate student, while a crew of employees busily turns out orders of bagels, sandwiches and soup.

Beyond all of that is a window that looks into the heart of the business: the kitchen, where fresh bagels are prepared in authentic fashion, boiled and then baked on stone shelves in an oven.

“That gives it that distinct crunchy outside and chewy texture on the inside,” said Salcone, 55, who owns the shop with his wife, Deborah, 54. More.
