Einstein’s Franchisees Plan Big Bagel Expansion In New Mexico

Natalie Palmer’s journey to bagel franchising started with a simple desire for an Einstein Bros. Bagels on Albuquerque’s Westside.

Her mother, Shirley Profazi, had visited Miami and ate daily at an Einstein’s there. When she returned, the two decided to contact Einstein Noah Restaurant Group, the parent company in Denver, about securing a franchise.

“I wanted to be self-employed and be my own boss and this will be a perfect opportunity for that,” said Palmer, who is a nurse. “They liked us. We liked them. We liked the way the company is run.”
