Penn Station East Coast Subs, a fast-casual restaurant chain, is coming to Kansas City.
Franchisee and Lenexa resident Jim Wilkins plans to open the first area location — and the first in Kansas — at 8663 W. 135th St., Overland Park, on Nov. 1. The operations specialize in Philadelphia Cheesesteak Sub sandwiches served hot and made-to-order on freshly baked French bread.
Wilkins, who has more than 20 years of experience in the food and restaurant industry, plans to open six to eight more restaurants in the Kansas City area market. The restaurants run 1,725-square-feet and have 12-to-15 employees. Read more.
